Quicke’s British Cheddar and Walnut Bites

The Quicke family farm in southwest England has been around since 1540. “Twice as old as America,” owner Mary Quicke likes to quip. The family and its farm are all about tradition and history, which is one reason we’re so excited to share their Cheddar and Walnut Bite recipe, which has been passed down through generations of Quickes. Another reason we’re excited to share it is because these little biscuits are outstanding: cheesy and nutty and dense and entirely autumnal. The Quicke farm is dotted with wild walnut trees that ripen in the fall, so this is one of the family’s seasonal staples.
Quicke’s British Cheddar and Walnut Bites

  • Makes 20 Bites

Ingredients

  • 1/4 cup Quicke’s Mature Cheddar (about 2 ounces)
  • 1/4 cup softened butter (about 2 ounces or 1/2 stick)
  • 1/2 cup all purpose flour
  • 1/4 cup chopped walnuts
  • 1 egg yolk, whipped
  • pinch of cayenne pepper
  • pinch of teaspoon mustard powder
  • pinch of sea salt and pepper

Directions

  1. Pre-heat your oven to 350°F.
  2. In a large bowl mix together the flour, Quicke's Mature Cheddar and butter with a spoon until it looks like wet sand.
  3. Season mixture with salt, pepper, ground mustard and cayenne pepper. Then gradually add the egg yolk and mix until it forms a soft ball.
  4. Roughly chop the walnuts and incorporate into the dough, with a little water if necessary if dough is looking very dry.
  5. Roll out the dough on a floured surface to about 8mm in thickness.
  6. Cut into about 20 4inch rounds and place on a greased baking tray.
  7. Bake for about 10 minutes until gorgeously golden.
  8. Remove from the oven and while still hot add a little extra grated Quicke’s Cheese on top of each biscuit.
