Traditional British tea time wouldn’t be complete without one essential snack: scones. Quicke’s take on this iconic, tasty treat features shavings of their famous Clothbound Cheddar and savory Devonshire Red. Established in 1540, this English cheese company has a whole lot of history. Famous for their clothbound cheddars, this family operation has been using traditional techniques and timeless recipes for almost 500 years. With the addition of a generous helping of Quicke’s Whey Butter, these flaky pastries have the perfect balance of cheesy savor and melt-in-your-mouth sweetness.

  1. Place the butter in the freezer to get cold enough to grate, about 30 minutes. Heat the oven to 425F, then lightly grease a baking sheet.
  2. Use a box grater to grate the butter, then mix together the flour and salt and rub in the Quicke's Cows' Whey Butter.
  3. Stir in the grated Quicke's Mature Cheddar and add the milk to form a soft dough.
  4. Transfer onto a floured work surface and knead very lightly. Pat out to a round ¾ inch thick. Use 2 inch cutter or other circular object to stamp out rounds and place on the baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.
  5. Brush the tops of the scones with a little milk and top with Quicke's Devonshire Red Cheese. Bake for 12-15 minutes until well risen and golden. Cool on a wire rack. Spread thickly with Quicke's Cow's Whey Butter and a fruit preserve of your choice.
