Nduja, a spicy prosciutto spread from La Quercia, is a red paste that has an intense savor and gentle heat, making it the perfect topping for a crusty baguette or chunk of cheese. To complement this bite of spice, we’ve paired it with a hummus-like creation made from Cannellini Beans and Meredith Dairy Feta, plus a cheesy dip made from Bayley Hazen Blue and Vermont Creamery Fromage Blanc.

Ingredients

  • Nduja Spread
  • 4 Oz. La Quercia Nduja, at room temperature
  • 2 Oz. Peppadews, roughly chopped
  • 1 Tbsp. Peppadew Pickling Liquid
  • 1 Tbsp. Olive oil
  • 1 ea. Garlic clove, minced or grated
  • White Bean Hummus
  • 8 Oz. Cannellini Beans, drained
  • 4 Oz. Meredith Dairy Feta, drained
  • 1 Tbsp. Lemon Juice

Directions for Nduja Spread

  1. Mix all ingredients together in a medium mixing bowl until thoroughly combined, set aside until ready to serve

Directions for White Bean “Hummus”

  1. Puree the cannellini beans with the lemon juice and two tablespoons of water using a food processor or blender.
  2. Add the feta and continue processing until smooth. Set aside until ready to serve.

Directions for Point Reyes Blue Cheese Dip

  1. In a food processor, blend the blue cheese until a blue paste has formed.
  2. Mix all ingredients together in a medium mixing bowl until thoroughly combined, set aside until ready to serve.
