Robiola Italian Cheese
A soft-ripened variety within the Stracchino family, Robiola can have a variety of flavor profiles, depending on the type of milk it’s made from. There’s fresh robiola, robiola brusina, la tur, and brunet to name a few. What is constant in each cheese is a springy texture, high moisture content, and unwavering deliciousness. Robiola refers to any small format, non-strachino, non-pasta filata fresh to soft-ripened cheese produced in Italy, most specifically Piedemont.
