There are two primary ways of preserving capers: brining them in solution and curing them in salt. Brined capers are much more readily available, essentially the default type. Salted capers, while harder to find, have a more tender texture and a sweeter flavor profile. Rustichella's capers come from an island near Sicily, and they are cured in the salt from the surrounding sea. Rinse away the crystals before putting them to use, and you’ll have a more fragrant version of whatever dish you are putting them in, from pasta puttanesca to tartar sauce.
