Lardo has been made in Italy since the Roman times, with strips of fatback cut from Berkshire pigs. Pressed with spices - particularly rosemary - and then buried in salt for a month, the lardo emerges a silky white, delicate slab of meat. When sliced thin, lardo is traditionally served as an antipasto. But we love it for cooking - try it in a delectable carbonara pasta or melted into a meat dish for a little bit of savory herbal kick.
