Simple and refreshing, this original cocktail mixes aged gin with a dash of lemon juice and bitters, with a garnish of cool sage and lemon, paired with a hand-crafted bite featuring creamy Bijou, caramelized apples, smoked salmon, a hint of dill and creme fraiche atop a crisp cracker.

Ingredients
- For the Cocktail:
- 1 ½ oz. Gin, like Stonecutter Spirits Single Barrel Gin
- 1 oz. Gran Marnier
- ½ oz. Lemon juice
- 1 dash Angostura bitters
- Sage leaf for garnish
- Lemon peel for garnish
- For the Cheese Pairings:
- 1 ea. Vermont Creamery Bijou, 4 oz.
- 1 ea. La Panzanella Mini Croccatini, 6 oz.
- Caramelized apple
- Smoked salmon
- 1 dollop Vermont Creamery Creme Fraiche
- Fresh dill
Cocktail Directions
- Combine gin, Gran Marnier, lemon juice, and bitters in shaker.
- Stir 8-12 seconds and strain into chilled coupe glass.
- Lightly rub sage leaf on rim of coupe and float in drink along with lemon peel.
How to Cut and Serve
- Slice bijou into rounds and place on top of cracker and top cheese with thinly sliced caramelized apple and healthy crumble of smoked salmon.
- Using a small spoon, place a small dollop of crème fraîche on top of salmon. Garnish with a small sprig of fresh dill.
