A traditional English trifle is a type of dessert that’s similar to a deconstructed cake layered with fruits, cream, pudding, or any other kind of sweets. For this summer trifle, we’re using lemon shortbread and oatcakes rather than cake, and filling out the layers with a mix of creamy mascarpone, strawberry rhubarb jam, lemon jam, lemon juice, and fresh strawberries and rhubarb to create a bright, fruit-forward dessert treat with a touch of citrus that’s ideal for birthday parties and summer celebrations.

Directions

  1. Combine the sugar and lemon juice in a small saucepan over medium low heat, stirring to dissolve.
  2. Add the chopped rhubarb and simmer for 15-20 minutes or until the rhubarb softens and the mixture gets thicker.
  3. Remove from the heat and set aside to cool before composing the trifle(s).
  4. Using one large trifle dish or 3-4 small ones, begin by leveling a layer of mascarpone in the bottom of the dish, followed by crumbled oatcakes and lemon shortbreads. Then, drizzle the rhubarb mixture and preserves atop the crushed cookies, followed by another layer of mascarpone.
  5. Repeat the process until you have filled the trifle dish. Garnish with sliced strawberries and crumbled cookies. Serve chilled.
