Inspired by French St. Nectaire, this semi-firm wheel is washed in beer from Chicago’s is/was brewing, bringing a slight fruitiness to the rind.   • Sunny Ridge is inspired by St. Nectaire, a semi-soft, washed rind cheese crafted from cow’s milk in Auvergne, France. Blakesville Creamery’s take swaps out cow’s milk for goat’s milk, which brings a welcome brightness to the cheese.
  • Wheels of Sunny Ridge are washed in a rotating selection of beer from is/was brewing in Chicago, depending on what the craft brewery has available.
  • Washing the cheese with beer for the first few weeks of aging begins to break down the paste, creating the cheese’s semi-firm texture.
  • While washed rind cheeses are typically pungent, and some goat’s milk cheeses can be gamy, Sunny Ridge is fairly mild. It can be enjoyed equally by goat cheese skeptics and enthusiasts.
