What is quark, you ask? In Germany, quark – German for “fresh curd” – is a popular everyday cheese, making it well suited to a wide variety of uses. The first batch was requested by European chefs transplanted in Vermont in 1985. Quark is made from fresh milk that is coagulated overnight into curd, then drained in cheesecloth and whipped with a trace of creme fraiche. It has low butterfat content and smooth texture that make it a great yogurt stand-in with granola and fresh fruit. Add as part of a fluffy cheesecake or the top of a mousse for dessert, or top with granola for breakfast.
