Pavé Cobble was crowned the Supreme Champion at the 2017 British Cheese Awards, where it bested over a thousand other cheeses for top honors. What makes this champion so supreme? It’s a hand-ladled pyramid of fresh sheep’s milk that gets dusted in ash and aged for three weeks, which leads to a fluffy rind and a soft, silky paste that tastes of sweet cream, hazelnuts, and a touch of lanolin. Cheesemaker Roger Longman is an avid cyclist and named Pavé Cobble for the famously difficult style of cobbled-street bike climbs. How fitting, then, that this cheese mounted the competition to take first prize at the BCAs.
