French Goat Feta

Although the French have only been making feta for 25 years, the U.S. imports more than from Greece, Bulgaria and all the Balkans combined. Made by a single producer, Lactalis, French feta began as an ingenuous use of excess sheep milk from the region of Roquefort. Lactalis also owns the Roquefort brand Societe and wanted to avoid flooding the Roquefort market with too much cheese. Know for a milder, less salty flavor, French feta is aged in salted whey, not just brine, which imparts added creaminess. Made of pasteurized goats' milk.
