The name Klaverkaas, or ‘clover cheese’, refers to a diet rich in green clover that the pampered Holstein-Friesian herd enjoys day in and day out. The extra care lavished by the Kaamps family, one of the few remaining Dutch farmstead creameries, results in a cheese rich with brothy, caramelly flavor and a dense, toothsome bite, perfect in nearly every application- pair it with cherry jam on a cheese board, with a smear of mustard on a melty grilled cheese, or just snack on it all day long.
