For a twist on their iconic Flagship cow’s milk cheese, Beecher’s adds a portion of sheep’s milk, creating a mixed-milk masterpiece. While the clothbound wheels age, they develop their layered flavor and lovely dense bite. The earthy natural rind plays off the interior’s butterscotch sweetness and fruity notes. Make a sheep’s milk cheese plate with Flagsheep, feta, Ossau Iraty, and Raincoast Crisps Fig & Olive Crisps, all paired with a fruity rosé. Dropship items are excluded from our substitutions policy.

  • Sheep’s milk cheese is higher in both butterfat and protein content than cow’s milk. It imparts richness and dimension to Flagsheep.
  • Besides the addition of sheep’s milk, Flagsheep starts the same way as Flagship—with cheddar and Gruyère cultures and the cheddaring process.
  • Cheddaring is a technique where, after the curd is cooked and whey is drained, the curds are piled and cut into long slabs, which are turned and stacked over and over, consolidating and firming up as the rest of the whey drains.
  • Flagsheep is also clothbound, meaning it’s rubbed in butter and wrapped in cheesecloth before aging. When the cloth is removed, the cheese is left with a mottled rind with aromas of fresh butter and earth.
