  • Cayuga Blue is named for the longest of the Finger Lakes in upstate New York, where Lively Run Dairy is located.
  • This is a natural rind blue, meaning that the rind is formed in temperature- and humidity-controlled rooms where the air naturally dries the outside of the cheese with little intervention from the cheesemaker.
  • Natural rind blue cheeses are often less acidic than other blues, and they typically have a more developed, complex flavor.
  • Neither intensely tangy like many goat cheeses nor intensely pungent like many blues, this cheese will win over eaters who may be hesitant about either variety.
  • This blue’s earthy richness works incredibly well on a burger with sauteed mushrooms.
