Perfecting the craft since 1912, Maple Leaf, the Wisconsin farmer cooperative makes a creamy Gouda with real smoky flavor from Hickory. First they start with the pasteurized milk from neighboring farms, then they allow a little extra acidification to occur so that the tanginess is still perceptible through the smoke. And the further aging of it allows the smoke to permeate all the way through to the core.

    Lager, Dunkel, Schwarz, Pilsner, Kolsch Ale

    Lagers run the gamut from crisp, pale Pilsners to dark-malted Dunkels and Märzens. Flavors are typically approachable and mellow, a delicate balance of toasted bread, gentle sweetness, and mild hop bitterness for structure.
    Pair with: Almost any firm, mild cheese like Tomme de Savoie or Landaff Creamery Landaff.

  • Malbec

    This rustic wine is inky and dark, full-bodied with plenty of tannins. Fruity flavors of plums and berries are contrasted by spice and leather.
    Pair with: Equally toothsome cheeses like Boerenkaas Gouda.

One of the most gratifying parts of the business for us is seeing a small producer grow. And it’s even better when they grow and still keep the principles that made them special in the first place. Maple Leaf Cheese of Wisconsin has been producing great cheese for over 100 years from milk from a cooperative of farmers. Their cheeses are some of our family favorites and we’re sure you’ll agree.
