Nagis has got your number – the kilo round is one third the size of the famous Brie de Meaux – but a good deal of complexity lurks within the necessarily pasteurized paste. The interior is a touch firmer, but admirably milky and sweet, while the rind is tight and perfectly edible. Give it some time out of the fridge and it will break down into near-liquidity, smacking of savory mushroom and black truffle. This authenticity is due to generations of skilled Rouzaire family members behind the lauded label. From the Brie capital, Ile-de-France - it’s the Ile deal!
