When the owners of the Antigo cheese plant (Antigo, Wisconsin) announced they would close the plant, the people of Antigo refused to let 70 years of cheesemaking history disappear. They pooled their resources, bought the plant and began producing award-winning 20 month aged pasteurized Parmesan under their own label. This very palatable and easy to handle table cheese has since been picked up by the reputable Sartori Family Company. Nutty and rich, but creamier and less saline than Parmigiano-Reggiano. Surprising numbers of customers prefer it to the King of Italian cheese in blind tastings, and it holds its own with Lambrusco. |
