
Murray's Real Salami is to cooked and cured meats what Murray's Cheese is to dairy: a shop where you can learn about, taste and buy the best artisan-made meats sourced from conscientious farmers and producers.
It comes by a million names: charcuterie, salami, cured meat...even deli meat. Murray's Real Salami includes the finest cooked and cured meats we could find, many from small, traditionally-minded producers in the United States.

What are cooked and cured meats, you ask?
Whole Cooked Meats
Whole cooked meats are preserved with a combination of salt (usually liquid brine), heat, and often smoke. Think tastier versions of your childhood favorites, from animals that are raised humanely and treated with respect: Prosciutto Cotto, House-Roasted Turkey, half a dozen kinds of ham, from Applewood Smoked to Jambon Royale to Rosemary Ham and Tasso Ham, Corned Beef, Pastrami, House-Cooked Roast Beef, Roasted Pork Loin, Porchetta, and more. Depending on its preservation, you might find Bacon here. We have 3 kinds of bacon for openers.
Encased Cooked Meats
Then there are the encased cooked meats. This is the extended glory of the hotdog family: Beef Franks, Skinless Franks, Bratwurst, Chorizo, Breakfast Sausage, Chicken Sausage and the rare French delights Boudin Blanc and Boudin Noir.
Whole Cured Meats
Our whole cured meats include whole cured cuts like the European classics Prosciutto di Parma, Serrano, Jamon Iberico and Speck, as well as new world inspirations from across the U.S. We like a little fat thrown in, so don't overlook the Pancetta, Guanciale, and of, course, Lardo. Sometimes Bacon, too! Don't forget the bacon.
Encased Cured Meats
These are the earthier, more complex salami particularly triumphant in Italy. Our domestic producers have studied extensively, and some cases only moved to the U.S. in the past few years. Whether it's a milder "chub" salami with herbs or pepper, or the mold-dappled delights that hang from the rafters (our favorites: Sopressata, Finocchio, Crespone, Salame Barolo, Salame with Truffle and Salame Piccante) this is preserved meat at its deepest and most essential.
Pâté
Looking to smear a slab of something hearty or a dab of something luscious? There are a half dozen pâté of the coarse variety plus mousse with mushrooms and truffle, duck rillettes, and exotics made from venison, pheasant and rabbit.
