MURRAY'S BOOT CAMP IS BACK!
Spend your weekend learning and tasting what we know best: CHEESE! Murray’s Boot Camp is for cheese enthusiasts and professionals alike who seek a strong (and tasty) foundation in the world of cheese.
Our two-day program is a serious course of study and includes suggested readings, a final exam, and hours of instructions from some of the great cheese-minds at Murray’s. Successful completion of the program is awarded with a Certificate of Achievement.
After multiple sessions of lectures, demonstrations, and tastings in our Greenwich Village classrooms, each student will be able to differentiate cheese styles, describe cheeses in depth, and pair like a pro.

Wine, beer, beverage, mixology professionals: Grow your knowledge of fermented foodstuffs with this cheese intensive. Make your wine shine and your beer cheer with expert pairings.
Career changers: Jump up from that desk and onto a cheese counter. Learn all you need to dive head first into the cheese world and its many career opportunities.

SESSION 1: FROM MILK TO CHEESE: INTRODUCTION TO MILK CHEMISTRY AND CHEESEMAKING
Welcome to Cheese Boot Camp: no ordinary cheese course. Our first official session focuses on backstory and basics - you’ll want your pencils out and eyes up for this one! Get ready to explore the origins and different families of cheese all while applying the science of tasting. This class will set the educational foundation and help us establish a vocabulary for the sessions ahead!
SESSION 2: PAIRING PERFECTION
Now that we’ve covered some basics, let’s apply what we’ve learned in a pairing class! Prepare to take your palate on an adventurous journey through different cheese and pairing item combinations. We’ll visit chutneys, jams, honeys, and more on this exquisite journey to Flavortown!
SESSION 3: COUNTER CULTURE
By your second day of Boot Camp you should be able to pair like pro and throw down some knowledge, but how’s your “wrap game?” Time to learn some tricks of the trade, like how to cut, portion, and wrap cheese just like the gang here at Murray’s!
SESSION 4: FROM THE CAVES!
Time to hit the books again! Here you’ll learn about the two processes that are integral to the creation of cheese - cheesemaking and affinage. Learn about how we go from milking to making in this special session that will feature content (and cheeses!) from our very own Murray’s Cheese Caves.
SESSION 5: PAIRING PERFECTION: THE BEVERAGE EDITION!
At ease, troops! You’ve come a long way! Let’s revisit those pairing principles again and raise a glass! You’ll be pairing like a pro with various beers and wines to try with our last round of cheeses. We’ll wrap our Boot Camp the same way we started, with cheese, some beverages, and a celebratory huddle.
