You could say that apple cider and maple syrup runs through the veins of the Wood family of Springfield, Vermont. The Wood’s Cider Mill has been making cider jelly since 1882 from fresh, locally harvested apples. They mash and press apples on the farm’s original screw press to extract the juice that will become sweet cider, which is then reduced over a wood fire in a stainless steel evaporator. The jelly is naturally sweet—nothing at all is added to enhance the flavor, not even sugar. There are 30-50 apples in every single pound of cider jelly!
