Gorgonzola is indisputably Italy’s most well-known blue cheese, and it’s been made since the 11th century in the town that gives the cheese its name. While there’s more than one style of Gorgonzola (there’s Gorgonzola Dulce and the smaller Gorgonzola Picante), there’s also more to Italian blue cheese than just Gorgonzola. Blu di Langa is unctuous and mooshroom-y, Blu di Bufala is buttery and rich, Blu di Moncenisio is vegetal and moist.
