Bloomy

Cheeses with “bloomy” rinds are soft and creamy, with downy white exteriors. These cheeses--like Brie or Camembert--are considered bloomy because of the “blooms” of Geotrichum candidum or Penicillium candidum that grow on the rind, giving it a slightly fuzzy texture and sometimes a wrinkled, almost brain-like appearance.
