Truckle

Sometimes described as “barrel-shaped,” truckles are cylindrical wheels of cheese, taller than they are wide, somewhat resembling a log. Traditionally, certain farmhouse cheddars are formed in truckles, during a process that includes keeping a lard-coated cheese cloth on the wheel for the duration of its aging. One of the most popular examples is Flory’s Truckle from Milton Creamery, a beloved rustic cheddar.
