Much like the oak tree for which this unique cheese is named, Ur-Eiche is one mighty wheel. Made from raw milk and washed in oak extract, this Alpine is a total flavor bomb: earthy and sweet, with a meaty depth, toasty hazelnut notes, and a pineapple aroma. That’s thanks to the innovative work of Christa Egli, who crafts this cheese at a creamery outside Zurich. Unlike the ancient oak, Ur-Eiche won’t last long, whether you snack on it with McClure’s Garlic Dill Pickles or melt it into a gratin.
