Ubriaco

Ubriaco, which means “drunk” in Italian, describes a style of cheese that has been soaked in wine. Originating in Treviso, Italy, Ubriaco cheese is typically made from cow’s milk, aged for 12 months, and then soaked in barrels of a local wine for the next 6 months. The soaking process, known as ubriacatura, is what gives this cheese its distinct fruity sweetness.
