Murray's Cave Aged Reserve Cornelia
An homage to the original location of Murray's, Cornelia arrives just-formed from Point Reyes Farmstead. Pampered first in our sauna-like washed rind cave, then finished in our natural rind cave, she develops a sublimely buttery, rich paste with a roasted peanut finish. Cornelia is perfect on her own, but she totally digs the company of a medium-bodied red and bold charcuterie.
Unless noted otherwise, Murray's cheeses sold by the lb ship in multiple 0.5 lb increments. To request a whole wheel, please contact the Murray's team at orders@murrayscheese.com at least 72 hours prior to your desired ship date.

Just the Facts
Chianti
Chianti is named for a region in Italy, and is actually made from a blend of grapes (mostly Sangiovese). This dry, medium-bodied wine has a distinct herbal quality (think rosemary and oregano) with flavors of dried plums and cherries.Pair with: An herb-crusted cheese like Hudson Flower or a Tuscan Pecorino.
Merlot
A smooth and medium-bodied wine with a more rounded flavor than other reds. Dark fruits are present but with minimal tannins and no noticeable spice.Pair with: Earthy tommes like Toma Walser, mellow Fontina, or a lightly aged goat cheese like Leonora.
Pinot Noir
Lighter bodied and delicate. Old World style generally offers more funk, New World more fruit.Old World Pinot: Flavors of fresh cherries and raspberry balanced by a barnyard funk and high minerality. Sometimes has floral aromas, reminiscent of rose petal.
Pair with: Almost anything! Works with funky Frenchies Epoisses and Langres, or mild natural rinds like Tomme de Savoie.New World Pinot: More sugary, with jam-like fruit, dried cherries, oak, and spice.
Pair with: Full, fatty flavors. Alpines, cheddars, and Manchego.
