Pecorino Foglie di Noce is a raw sheep’s milk cheese from Italy wrapped and aged in walnut leaves. It has a firm, crumbly paste that’s buttery and mild, but the addition of the walnut leaves infuses the cheese with an earthy flavor and herbaceous essence. Rich and complex, this traditional Italian cheese is best paired with rustic Italian meats like Brooklyn Cured Sliced Finocchiona or Creminelli Wild Boar Salami.

The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
