  • Paneer is a fresh cheese with origins in Northern India and Pakistan.
  • It’s made by heating milk and adding an acid for coagulation (Sach uses organic vinegar).
  • When the curds have formed, they’re traditionally rinsed, drained, and formed into a flat disk, then rested.
  • In this version, Sach adds raw habanero peppers. They’re one of the hottest commonly available chiles, and while they are quite spicy, they also carry a bright, fruity, citrusy flavor.
  • Paneer holds up well to heat, browning beautifully and retaining its shape and texture when cooked. It works for grilling, sauteing, frying, and air-frying.
