The Farm At Doe Run Seven Sisters
This caramelly, profoundly snackable cheese is everything that’s good about American artisanal cheesemaking. Seven Sisters is a farmstead cheese, produced on the rich, rolling farmland of southeastern Pennsylvania. Doe Run practices both sustainable, organic farming and rotational grazing, meaning they have intensely nutritious grass that their herd of Jerseys converts into milk of the highest quality. That milk is then crafted into a cheese that’s aged in stone caves right on the farm, where it develops the caramel notes of a Gouda and the hazelnut and sweet milk flavors of an Alpine. This is cheese done right.
