Chorizo is the classic, spicy dried sausage of Spain, and traditionally is flavored with spicy, smoked paprika. This Chorizo is made with Iberico pork - Iberico pigs forage in the forests of the Iberian peninsula, feeding on a diet of acorns, roots, and wild herbs. Their meat is swirled with flavorful fat, developing into a natural nuttiness that makes Iberico pig products so highly coveted. The heat and smokiness of chorizo balances the nuttiness and porky flavors of the meat. They're enhanced even more with an aged Manchego and a few slices of crusty rustic bread, or with a tall glass of a peppery red wine.

Farmhouse ales, instead of being driven by malt or hops, depend on the yeast for their distinctive spicy, floral, and tart flavors. Commonly made by brewers in France and Belgium, farmhouse ales are usually light in color and body and quite effervescent. From time to time, brewers allow wild yeasts to ferment the beer, resulting in a brew that falls somewhere in between pleasantly bright to bracingly sour.
