Tiramisu is one of those rare desserts that has it all. There’s an incredible depth of flavor that reaches from the sweetness of vanilla all the way to dark, roastiness espresso. There’s an entire range of textures too. And all these varying qualities are melded together and layered atop one another for an intricate, immensely satisfying dessert. But how do you make sure you’re doing it right? Well, you use a recipe from Francis Joven, pastry chef of Marea, the high-end Italian eatery just off Central Park. Francis developed this recipe exclusively for Murray’s, so it’s the one way you’ll be able to bring the restaurant’s high end cuisine into your own kitchen.

  • 6 egg whites
  • 7 egg yolks
  • 3/4 cup sugar
  • 2/3 cup cake flour
  • 3/4 cup cornstarch
  • 3/4 cup heavy cream
  • 3/4 cup milk
  • 1/4 cup sugar
  • 4 egg yolks
  • 1 vanilla bean
  • 1.5 cups Murray’s Mascarpone
  • 1/2 cup Anglaise
  • 1.5 cups heavy cream
  • 2/3 cup sugar
  • 1 tbsp gelatin
  • pinch of salt
  • 1/2 cup espresso
  • 3.5 tsp simple syrup
  • 3 tbsp amaretto
  • 3 tbsp Marsala Wine
  • 1 cup sugar
  • 7 egg yolks
  • 2 and 3/4 sticks of butter
  • 1/2 tsp vanilla
  • 3 and 1/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • pinch of salt

Directions For Lady Fingers

  1. Preheat oven to 350F.
  2. Whip egg whites in a mixer until foamy.
  3. Stream in sugar gradually. Whip to medium peak.
  4. While whites are starting, whip yolks in a mixer until ribboned.
  5. Sift together cake flour and cornstarch.
  6. Alternately fold dry ingredients and whites into yolks.
  7. Using a 1/2" plain pastry tip pipe the mixture onto a parchment lined baking sheet.
  8. Bake for 13-17 minutes.

Directions For Anglaise

  1. Combine all ingredients in a pot and heat, being careful not to bring to a boil. Stir until sugar is fully dissolved.

Directions For Mascrapone Mousse

  1. Gently warm Anglaise, sugar, vanilla and salt.
  2. Melt gelatin into the mixture.
  3. Whip cream and mascarpone together.
  4. Fold cream into Anglaise.
  5. Pipe the mousse into molds.

Directions For Chocolate Sable

  1. Preheat oven to 325F.
  2. Sift dries and set aside.
  3. In a stand mixer, mix cream, butter, and sugar until smooth.
  4. Slowly add egg yolks and vanilla.
  5. Fold in dry ingredients in 3 parts.
  6. Wrap in plastic and chill for at least 1 hour.
  7. Roll to desired thickness and punch with cookie cutter.
  8. Bake for 8-10 minutes.

Directions For Lady Finger Soak & Assembly

  1. Combine espresso, simple syrup, wine and amaretto and pour over Lady Fingers
  2. Arrange lady finger sponge atop chocolate sable and top with mousse. Sprinkle cocoa powder to coat.
