This is a hot dog for a special occasion, when you want to go all out. And it’s totally worth it, whether you use our favorite Olympia Provisions franks or not (if you haven’t tried them, you definitely should!). The toppings are what make this dog stand out, from the melty white Cheddar to the smoked onion jam to the crumbled bacon. Don’t skip the cilantro aioli, the only element of this recipe that requires work but only whizzing a few ingredients in a blender. It’s the herby, acidic kick from the aioli that brings the whole thing together.

For the Aioli:

  1. Roughly chop the bunch of cilantro into 1-inch pieces.
  2. Add all aioli ingredients to a blender, and blend on high until smooth.
  3. Pour into a bowl and chill.

For Cheese Dog Assembly:

  1. Preheat oven to 325 F.
  2. Lay bacon out flat on a rack set on a sheet pan.
  3. Bake for 12 minutes, then flip and bake for another 12 minutes.
  4. Allow the bacon to cool, then chop and set aside.
  5. Shred the white Cheddar and set aside.
  6. Cook the hot dogs to your liking (we like cooking them on a grill for maximum smokiness).
  7. In a small frying pan over medium heat, melt the butter and toast the buns (un-split) on each side for about 1 minute.
  8. Open the buns and place two hot dogs each inside, then top with shredded cheddar. Melt in the microwave for 30 seconds or under a broiler for about 2 minutes.
  9. When the cheese is melted, top the hot dogs with all of the condiments and garnish with cilantro leaves. Enjoy!
