Sour Cherry Gin Sling


This drink is a lovely combination of tart and sweet with just the right amount of refreshing fizz. Make a simple sour cherry syrup with Divina Sour Cherry Spread. From the shores of Greece, these ripe cherries soak up the sun before they are picked by hand and pressed into a delectable jam. With the addition of gin, fresh lime juice, and lemon zest, you’ll be transported to the sunny Mediterranean with just a sip.

1/2 lb. Sour cherries (pitted & destemmed)

1/4 cup Divina Sour Cherry Spread

1/2 cup Water

Zest from 1 lemon

1 cup Gin

1/3 cup Combier or Cointreau

1/3 cup Fresh lime juice

1 cup Sour cherry syrup

Angostura bitters

Sparkling Water

2 limes

To make the syrup, combine the cherries, sour cherry spread, water and lemon zest in a saucepan and bring to a boil. Cover and let the mixture simmer for a half hour. Pour the reduced mixture through a strainer and set aside to cool.
Once the syrup is cooled, combine the gin, Combier, lime juice, sour-cherry syrup and 3-4 dashes of bitters in a large pitcher. Stir to incorporate. Pour over ice in Collins or rocks glasses and garnish with lime wheels.
