With its cozy, crowd-pleasing flavors, Beecher’s Yule Käse is the quintessential holiday cheese. It’s a unique version of their Flagship Reserve, first clothbound and matured for 13 months, then further aged in red wine and blackberry honey. The result is a symphony of flavor—notes of roasted nuts and sweet caramel, floral honey and red berries. Make a festive feast by pairing this elegant wedge with La Quercia Prosciutto Americano and Trois Petits Cochons Mini Toasts.

“For my annual Christmas party, I always make an abundant cheese platter with slices of Yule Käse, ribbons of prosciutto, and big piles of grapes. It’s salty, sweet, and filled with holiday spirit.”

  • Yule Käse starts the same way as Beecher’s Flagship—with cheddar and Gruyère cultures and the cheddaring process.
  • Cheddaring is a technique where, after the curd is cooked and whey is drained, the curds are piled and cut into long slabs, which are turned and stacked over and over, consolidating and firming up as the rest of the whey drains.
  • It’s also clothbound, meaning it’s rubbed in butter and wrapped in cheesecloth before aging. Yule Käse is aged for 13 months, developing a natural rind before its second aging period where the honey and wine and introduced.
  • Kansas City Canning Co. Balsamic Pickled Grapes make a great match for this cheese—the sweet-tart grapes bring out Yule Käse’s richness and fruity undertones.
  • Only available seasonally, this cheese deserves a bottle of champagne or glass of port.
  • In 2003, lifelong cheese lover Kurt Beecher Dammeier opened Beecher’s Handmade Cheese in Seattle’s historic Pike Place Market.
