When it comes to bloomy cheeses, Intergalactic is in a galaxy all its own. Perrystead Dairy brings Portugal to Philly, using thistle rennet to give their flagship cheese its green olive notes. Those mingle with the tang of fresh milk and a yeasty, baked-bread flavor. Expect an out-of-this-world texture in each little cube, with the soft, wrinkled rind yielding to a gooey creamline and fluffy center. With just a touch of funk, it plays well with the floral notes of Akron Honey’s Hibiscus Honey.

  • The name Intergalactic is a play on the wide range of techniques used to make this cheese—interdisciplinary meets lactic.
  • Using rennet from the cardoon thistle, a relative of the artichoke, to coagulate the milk (rather than animal rennet) is a hallmark of Portuguese and Spanish cheesemaking. Thistle rennet cheeses typically have a distinct tangy, vegetal flavor.
  • Intergalactic is fairly unique in being an American-made thistle rennet cheese, as well as a thistle rennet cheese made with cow’s milk (they’re traditionally made with sheep’s or goat’s milk).
