We’re putting a char-grilled twist on a traditional baked chicken recipe with these tasty bites of fresh flavor. Roulade, a stuffed chicken dish, often features cheese and herbs, so we’re packing these delicious rolls with lightly salted mozzarella, sundried tomato pesto and spinach for a bright burst of Mediterranean flavor. Historically produced in the southern Italian regions of Campania, Lazio, and Apulia, Murray’s mozzarella is made locally with high quality cows' milk from upstate NY. Lightly salted, it’s yielding and chewy, with a fresh milk flavor, adding a sweetness to this grilled chicken.

Ingredients

  • Boneless, Skinless Chicken Breasts
  • 8 Oz. Lightly Salted Mozzarella, sliced into 4 pieces
  • 4 Oz. Sun Dried Tomato Pesto
  • 8 Oz. Frozen Spinach, thawed
  • 3 Tbsp. Smoked Paprika
  • 1/2 Tbsp. Garlic Powder
  • 4 Tbsp. Kosher Salt
  • 4 Tbsp. Olive Oil

Directions

  1. Butterfly, or cut each chicken breast in half, leaving about ½ inch to keep each half attached. Place the butterflied chicken breasts into a medium bowl and add the smoked paprika, garlic powder, salt, and olive oil. Cover and let marinate for at least 30 minutes.
  2. Once the chicken has marinated, stuff each breast with a slice of mozzarella, 1 ounce of the tomato pesto and two ounces of the thawed frozen spinach. To close each chicken breast use three to four toothpicks to hold the meat together while grilling.
  3. Heat an outdoor grill or grill pan over medium heat.
  4. Once heated, place the filled chicken breasts onto the grill and cook about 7 to 8 minutes per side, or until the internal temperature reaches 165F. Once cooked, let the chicken rest for at least 5 minutes.
  5. Serve the chicken with your favorite summer side dish, and enjoy!
