Ops Pizza, headed by chef Michael Fadem, is a Bushwick, Brooklyn operation that’s been serving up original sourdough pizza and natural wines since 2016. Topped with fresh vegetables and a sprinkling of another Italian favorite, Pecorino Romano, it’s the perfect combination of Italian tradition and New York creativity.
Nduja Provolone Pizza by Ops Pizza

Ingredients
- 1 ea. Frozen or homemade pizza crust
- 2 1/2 oz. Provolone
- 1 ea. La Quercia Nduja
- 2 oz. Pecorino Romano
- Fresh produce for garnish
- Extra Virgin Olive Oil
- Sea Salt
- Black Pepper
Directions
- Preheat the oven to 500F and prepare a pizza stone or baking sheet for an 8-inch pizza.
- Cover the dough with grated Provolone and place dollops of nduja all around the cheese.
- Add vegetables of your choice, such as peppers or tomatoes.
- Sprinkle with sea salt and drizzle extra virgin olive oil. Bake the pizza for about 8 minutes.
- When done, sprinkle with sea salt and black pepper, slice, and finish with grated Pecorino Romano.
