This original pie from Ops Pizza features a hearty helping of Nduja (pronounced en-DOO-yah), a spiced meat spread, and smooth Provolone for a decadent combination that is guaranteed to please. Ops Pizza, headed by chef Michael Fadem, is a Bushwick, Brooklyn operation that’s been serving up original sourdough pizza and natural wines since 2016. Topped with fresh vegetables and a sprinkling of another Italian favorite, Pecorino Romano, it’s the perfect combination of Italian tradition and New York creativity.

  1. Preheat the oven to 500F and prepare a pizza stone or baking sheet for an 8-inch pizza.
  2. Cover the dough with grated Provolone and place dollops of nduja all around the cheese.
  3. Add vegetables of your choice, such as peppers or tomatoes.
  4. Sprinkle with sea salt and drizzle extra virgin olive oil. Bake the pizza for about 8 minutes.
  5. When done, sprinkle with sea salt and black pepper, slice, and finish with grated Pecorino Romano.
