Supremely cheesy mashed potatoes These aren’t your average mashed potatoes—Pommes Aligot is a classic French dish that’s a twist on this traditional creamy side. From the Midi-Pyrenees region, this age-old creation is typically served for special occasions, accompanied by similar hearty dishes like sausage and roasted meats. While it can be made with a number of meltable cheeses, we’ve selected our beloved cave aged Gruyère as the star of this mouthwatering mash. Nutty and sweet with notes of caramel, it’s an Alpine favorite that perfectly complements the rich potatoes and chives garnish.

Ingredients
- 2 lb.s (6 ea.) Yukon Gold Potatoes, peeled
- 1 cup Milk
- 3 Tbsp. Isigny Ste Mère Unsalted Butter, 250 G
- ½ lb. Salted Mozzarella, grated
- ½ lb. Murray's Cave Aged Gruyère, grated
- 2 Tbsp. Chives, chopped
- ½ cup Kosher salt
- Kosher salt to taste
Directions
- Place the peeled potatoes in a medium pot and cover with water. Add a handful of kosher salt and cook over high heat until the potatoes are fork tender, about 25 minutes.
- Heat the milk and butter in a small sauce pot.
- Once the potatoes are cooked, drain and place into a food processor. Add the milk and butter mixture and process until just smooth.
- Add the potatoes back to a medium sauce pot and place over a medium heat.
- Slowly add the grated cheese, mixing with a spoon constantly, until all the cheese has melted. If needed, adjust the consistency with more warmed milk. Season with salt.
- Garnish with chopped chives.
