Ingredients
- 2 cans Matiz Sardines With Piquillo 4.2oz
- 1 tsp. Murray's Wildflower Honey 12oz
- 1 tsp. Lemon zest
- 2 tsp. Lemon juice
- 3 Tbsp. Murray's Mediterranean EVOO 500ML
- 1/2 tsp. Kosher salt
- 2 Small heads radicchio
- 3/4 cup Ricotta Salata, shaved or crumbled
- 1/2 cup Roasted unsalted pistachios, chopped
Directions
- In a small bowl, mash the anchovies with a flexible spatula or spoon to form a paste.
- Add the honey, lemon zest and juice, olive oil and salt and whisk to emulsify and combine completely.
- Clean and roughly chop the radicchio before placing it in a large bowl and dressing with the vinaigrette. Ensure all leaves are equally coated.
- Arrange on a large serving platter, topping with the crushed pistachios and ricotta salata.
