Directions

  1. In a small bowl, mash the anchovies with a flexible spatula or spoon to form a paste.
  2. Add the honey, lemon zest and juice, olive oil and salt and whisk to emulsify and combine completely.
  3. Clean and roughly chop the radicchio before placing it in a large bowl and dressing with the vinaigrette. Ensure all leaves are equally coated.
  4. Arrange on a large serving platter, topping with the crushed pistachios and ricotta salata.
