- In a medium non-stick pan,melt the truffle butter over medium-low heat until it begins to foam. Add the eggs and, using a small spatula or plastic whisk, stir the eggs rapidly.
- Continue to mix the eggs over medium-low heat until small curds begin to form – you are looking for a smooth consistency that also has the eggs cooked through, this should take about six minutes.
- Once the eggs are cooked, stir in the grated cheese.
- Portion into four small bowls and grate the fresh truffle over top. Serve immediately.
