The French Onion Sheep Grilled Cheese

Ingredients
- 8 slices sourdough or Pain au lait Pullman bread
- 1 1/2 cups Pyrenees Brebis, grated
- 1/3 cups Three Little Figs French Onion Confit
- 1 cup cornichons, cut in half length-wise
- 8 oz boxed fried onions
- 4 tbsp butter

Directions
- Spread the onion confit on one slice of bread, then top it with cheese, cornichons, and other slice of bread.
- Butter the outside of each bread slice with half a tablespoon of butter. Grill the sandwiches on medium heat until golden-brown on one side, then flip and repeat. Once cooked, open the sandwiches and add in the crispy fried onions in to finish. Serve immediately.
