White Truffle Moliterno
If ever there was a luxurious cheese, White Truffle Moliterno is it. A well-truffled cheese requires loads of craft and care to pull off (the fancy fungus’s assertiveness can make it a handful to work with), and this one has been pampered with attention. The cheese is aged before truffles are even introduced, so the paste develops a succulent, buttery flavor that can hold its own. After ripening for 4 months, it is slowly infused with Italian white truffles, which are even rarer and more prized than traditional black truffles. Then the cheese matures more, the truffly essence spreading throughout, and the indulgence factor hitting levels of ritzy glamor.
