Summer Pasta Salad with Broccoli Melt Sausage & Mozzarella by Seemore Meats & Veggies

Seemore Meats & Veggies knows sausage, crafting creative links we love. But they also know how to use their sausages to transform a simple dish, as in their recipe for Summer Pasta Salad. The star is the Broccoli Melt sausage, infused with broccolini, pepperoncini, and Monterey Jack. It gets tossed with cheesy tortellini, veggies, and big pieces of rich buffalo mozzarella, all coated in a tangy TikTok-inspired dressing. It’s a meal; it’s a side; it’s everything you want in a summer dish.

2 Tbsp. mayonnaise

1 Tbsp. red wine vinegar

1 tsp. dried oregano

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. red pepper flakes

1 Tbsp. chopped banana peppers

Salt and pepper to taste

9 oz. cheese tortellini, cooked and cooled

12 oz. (4 links) Seemore Meats & Veggies Broccoli Melt Sausage, sliced, cooked, and cooled

2 Tbsp. Murray’s Marinated Sundried Tomatoes

1/2 head broccoli, cut into bite-size pieces, blanched, and cooled (frozen and thawed is fine!)

8 oz. Murray’s Buffalo Mozzarella, torn into chunks

0.5 Lb Murray’s Parmigiano Reggiano, finely grated, to finish

In a medium bowl, combine the mayonnaise, red wine vinegar, oregano, garlic powder, onion powder, red pepper flakes, and banana peppers. Whisk to combine. Season to taste with salt and pepper.
Place the tortellini, sliced sausage, sundried tomatoes, and broccoli in a large bowl.
Pour salad dressing over and toss until well-mixed and evenly coated with the dressing.
Add the chunks of buffalo mozzarella cheese, and gently toss again until the cheese is evenly distributed.
Top with finely grated Parmigiano Reggiano and enjoy!
