- Murray’s Honey Goat Gouda is a nutty, mild goat’s milk cheese infused with fresh honey to create its signature sweetness.
- It is made by the Kaamps Estate. Kaamps Estate is one of the very few farmstead cow’s milk cheesemakers in Holland.
- This goat Gouda is not farmstead – the milk is sourced from neighboring goat dairies.
- Gouda cheese gets its name from its Dutch city of origin, though as the style of cheese has expanded across the globe, so too has the name evolved to apply broadly to the style of cheese rather than the city of Gouda.
- Traditionally made with cow’s milk, goat, sheep, and mixed milk versions are becoming increasingly popular.
- Goudas are a washed-curd cheese, meaning that after the curds are cut, they are rinsed—or “washed”—with water.
- This process increases the pH level of the cheese, as well as its sweetness by preventing the breakdown of sugars into acid.
- Fresh honey is directly added to the paste of Murray’s Honey Goat Gouda early in the production process.
- Honey is also included in the washing mixture during the aging process.
- The infused honey is the perfect complement to the naturally nutty, sweet flavors of the cheese.
- Murray’s Honey Goat Gouda is excellent for melting and snacking, though also enjoyed simply sliced on a cracker and paired with a glass of crisp white wine.
When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
