Murray’s Cavemaster Reserve Mistoa
From the valleys of the French Pyrenees to the Caves at Murray’s, this original creation embarks on an international journey of flavor to emerge as an entirely new version of a centuries-old classic. Ossau Iraty, the inspiration for this mixed-milk wheel, is an AOC-protected cheese of Franco-Basque origins made with sheep’s milk, and internationally beloved for its firm, sweet profile and gentle notes of toasted wheat. After being infused with goat’s milk to create a fresh take on this traditionally sheepy stunner, these young wheels come to us to age in our Natural Cave for 3-4 months, during which our Caves Team rubs and flips them once a week until they’ve reached their peak flavor: a sweet, grassy cheese with notes of cooked milk and an aroma of fresh earth and broccoli. With a firm yet pudgy ivory paste and just a hint of lactic tang, this Cavemaster creation is a seriously snackable bite of mellow, creamy delight.

Our Cavemaster Reserve selection is a line of premium, unique cheeses that come straight from one of our four caves. Our Natural Rind Cave is home to some classic Cavemaster expressions, such as Hollander and our Stockinghall Cheddar.
