- Microplane cloves of garlic. Heat a large sauté pan over high flame for 5 minutes. Add 2 tablespoons of canola oil, then add the mushrooms, cooking until they begin to brown. Next, add the onion and green bell pepper, followed by the the Worcestershire sauce, half of the butter, and microplaned garlic. Cook over medium-low heat for about 30 minutes, until the onions have begun to caramelize. Finish with a squeeze of lemon juice. Set aside.
- Meanwhile, preheat an oven to 400° while heating another large pan over high heat to sear the steak. Season the steak liberally with salt. Add the remaining 2 tablespoons of canola oil to the pan and gently place the steak in the pan. Add the remaining garlic cloves. Cook on one side until caramelized. Flip the steak and sear on the other side. Add the butter and thyme to the pan and move it to the oven to cook until an internal temperature of 125° is reached. Let the steak rest for 12 minutes, then slice thinly.
- To assemble the sandwiches, portion the streak into four. Place two slices of fontina on one slice of bread, and spread the onion mixture on the other. Place the sandwiches in the oven for about 5 minutes, until the cheese has melted. Garnish with ketchup.
