The Murray’s Cheesy Steak Sandwich

The debate over what makes a proper cheesesteak sandwich is rightfully heated. So as not to sear ourselves , we are not stepping into that discussion. We aren’t claiming the right to boast about a Philly cheesesteak or the South Jersey variety either. What we are claiming, however, is that this recipe makes one seriously deliciously cheesy steak sandwich. Like any good sandwich, it has three primary components: the bread, the filling, and the topping. And this recipe does right by that trinity. At the center of it all is a cut of flatiron steak, seared in a pan and finished in the oven. Topped over that is a caramelized combo of onions, mushrooms and peppers. All this goes inside cheesified sourdough for a cheese-steak sandwich that more than holds its own.

  • 1.5 lbs. flatiron steak
  • 1/4 lb. Fontina Fontal, thinly sliced
  • 1 yellow onion, roughly chopped
  • 1 green bell pepper, roughly chopped
  • 2 cups cremini mushrooms, roughly chopped
  • 4 garlic cloves
  • 4 tbps butter
  • 1 tbsp Worcestershire sauce
  • 1 lemon
  • 3 springs thyme
  • 2 tbsp kosher salt
  • 4 tbsp canola oil
  • 4 hoagie rolls

  1. Microplane cloves of garlic. Heat a large sauté pan over high flame for 5 minutes. Add 2 tablespoons of canola oil, then add the mushrooms, cooking until they begin to brown. Next, add the onion and green bell pepper, followed by the the Worcestershire sauce, half of the butter, and microplaned garlic. Cook over medium-low heat for about 30 minutes, until the onions have begun to caramelize. Finish with a squeeze of lemon juice. Set aside.
  2. Meanwhile, preheat an oven to 400° while heating another large pan over high heat to sear the steak. Season the steak liberally with salt. Add the remaining 2 tablespoons of canola oil to the pan and gently place the steak in the pan. Add the remaining garlic cloves. Cook on one side until caramelized. Flip the steak and sear on the other side. Add the butter and thyme to the pan and move it to the oven to cook until an internal temperature of 125° is reached. Let the steak rest for 12 minutes, then slice thinly.
  3. To assemble the sandwiches, portion the streak into four. Place two slices of fontina on one slice of bread, and spread the onion mixture on the other. Place the sandwiches in the oven for about 5 minutes, until the cheese has melted. Garnish with ketchup.
