A mix between a casserole and an omelette, this original Breakfast Bake is made with our own Cavemaster Reserve Mistoa, plus mouthwatering Surry Farm Hickory Bacon, eggs, and mushrooms. Mistoa, a Murray’s take on the classic Basque cheese Ossau Iraty, is a sweet, grassy cheese with notes of cooked milk and an aroma of fresh earth and broccoli, making it the perfect addition to this mouthwatering mix of eggs and veggies. Perfect for brunch, this easy and delicious casserole is guaranteed to please.

Ingredients

  • 4 cups Heavy cream
  • 10 ea. Eggs
  • 1 tsp. Garlic powder
  • 2 tsp. Dried thyme
  • ¼ tsp. Cayenne
  • 1 Tbsp. Kosher salt
  • 8 cups Brioche, diced
  • 3 cups Murray’s Cavemaster Reserve Mistoa, grated
  • 10 oz. (1 package) Frozen chopped broccoli, thawed
  • 2 cups Surry Farm Hickory Bacon, diced
  • 1 pint Shiitake mushrooms, cleaned and sliced

Directions

  1. Heat oven to 350F.
  2. Add cream and eggs to a large mixing bowl and whisk until combined. Add the garlic powder, dried thyme, cayenne and kosher salt. Whisk once more. Add the diced brioche to the bowl and squeeze the bread so that the custard mix soaks through thoroughly. Let this sit to soak for about 15 minutes.
  3. Meanwhile, place the diced bacon and sliced mushrooms onto a parchment lined sheet tray and bake in the oven until crisp, about 15 minutes. Once cooked, remove from oven and lower the temperature to 325F.
  4. Add the cooked bacon, mushrooms, and broccoli to the bread mixture. Add the grated cheese. Mix thoroughly.
  5. our this mixture into a 9x11” baking dish and cover with tinfoil. Bake the casserole in the oven at 325F for one hour. After an hour, remove tinfoil and increase the temperature to 350F. Cook the casserole uncovered for an additional 15 minutes. Let cool slightly before serving, then enjoy!
