The Penrose Bar Chairman’s Intent

A smoky, bittersweet cocktail with a coffee kick
Calling itself “The Upper East Side Local”, The Penrose is definitely a place we could see ourselves coming back to again and again. From the rustic wooden tables to tufted leather banquets, walking through the door feels like entering a neighborhood hangout, and their locally sourced food and thoughtfully created drinks provide the same kind of comfort as the decor. The Chairman’s Intent, created by Penrose Mixologist Pete Vasconcellos mixes cold brew coffee with a few different alcohols and liquers, as well as an egg white, to create a frothy and bright, easy sipping cocktail. Just be warned: The Chairman’s Intent goes down easy but pack a serious punch.

Ingredients

  • 1 oz Jameson Caskmates IPA
  • 1/4 oz American IPA (such as LIC Higher Burning IPA)
  • 1/2 oz lemon juice
  • 1/2 oz Barolo Chinato Cocchi
  • 1 1/2 oz Nitro Cold Brew Coffee
  • 1/4 oz Amaro Sfumato
  • 1/4 oz Murray’s Pink Grapefruit Rose Vinegar
  • Dash Bittermen's Hopped Grapefruit Bitters
  • 1 egg white
  • dried Sumac, for garnish

Directions

  1. Combine liquor, bitters, vinegar, eggwhite, coffee and lemon juice in a cocktail shaker.
  2. Shake cocktail shaker for 15 seconds to incorporate the eggwhite.
  3. Add 5 ice cubes and shake again to cool the mixture.
  4. Strain cocktail into an empty wine glass or goblet (without ice).
  5. Garnish with a dusting of sumac and enjoy immediately.
