Irish Cheddar & Potato Gratin

There’s hardly a more classically Irish pairing than potatoes and cheddar, and this creamy dish has plenty of both. Potato gratin, a baked dish featuring creamy potatoes with a crispy breaded top, is the ultimate comfort food, and for this Irish rendition we’ve upped the cheese factor with buttery Irish cheddar, and added some bold flavor with crispy bacon, scallions, and onions, making it perfect for brunch or a St. Patrick’s celebration.

Top with cooked bacon and scallions if desired.
Butter a square baking dish. Layer 1 lb. of the sliced potatoes into the pan. Add 1/4 cup of grated Murray’s Irish Cheddar. Repeat until all potatoes and cheese are used.
